Homemade croutons

I've been thinking of making my own croutons for a while (ever since I decided they greatly improve a salad and bought a bag — 6-12 slices of bread probably — for much more than a full loaf of bread). So, since I live alone and often have a hard time finishing a loaf of bread before it gets stale anyway, I've been freezing my leftover slices for the last few months.

I finally got around to attempting the crouton-making today. I used about 12 slices of bread and ended up with tons of croutons. (I could even make them giant-sized since I was deciding how to cut the bread.) I have so many, that now I fear they might go bad before I eat them all. I'm guessing toasted bread bits can mold, though I'm not quite sure. So, I put some finished croutons back in the freezer, and I'll see how that works out. (If fresh bread can be frozen, I'm hoping croutons can be, too.)

I found a couple recipes when I searched online, but I ended up using a recipe from a blog I follow called The Frugal Girl. The author was nice enough to point me to that archived recipe post when I e-mailed her asking if she had ever tried making croutons.

I had tacos for dinner, so I didn't get to try out the croutons on salad yet, but I tasted a few after I pulled them from the oven and they were quite tasty. They were also very simple to make. And, I still have about another 12 slices of bread in the freezer for when I need to make more.
