I'm way behind on posting, so I'm going to write a quick bit about food and hopefully come back in the next few days with a (late) holiday wrap-up.
Quiche time
I made a quiche tonight for what might have been the first time ever. In part, that's because I used to hate quiche. But in recent years, I've tried some and realized they aren't so bad. A college friend writes a cooking blog, Cooking and Eating in the Windy City, and posted a recipe for Sun-Dried Tomato, Spinach and Goat Cheese Quiche a few months ago. I saved it because it sounded good, and tonight I decided to make it.
A quick trip to the store upset me because, for the second week in a row, they didn't have the produce I wanted. I used to think they had a good variety and selection, but after the last two weeks, I'm not so sure. (Maybe they're slacking since it's winter?) So, instead of shallots, I substituted part of a sweet onion. I'm not sure exactly how they compare, but it worked OK. In anger over the lack of shallots, I also picked up some mushrooms, which I chopped up and added to the quiche. (In case you're curious, last week I wanted a zucchini and was unable to find any.)
The quiche turned out quite tasty. I'm hoping it reheats well for lunches this week. If you want to try it yourself, the recipe can be found here.
